Spiced Butternut Salad(胡桃沙拉酱)
1/2 cup butternut squash
1 apple – cored and sliced thinly
2 cups lettuce – chopped
1/2 cup fresh cranberries – quartered
Spiced Almond Sauce(五香杏仁酱)
1/3 cup raw almonds
3/4 cup water
juice and zest of 1 lemon
1/2 tablespoon fresh ginger
1 tablespoon agave
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground nutmeg
seeds of 1 cardamom pod
1/4 teaspoon hot pepper flakes
Peel and seed the butternut squash. Using a mandolin, slice into thin shreds.
Combine shredded squash in a bowl with apple slices, lettuce and cranberries. In a high-powered blender or food processor, combine all the sauce ingredients until smooth. Add to salad, toss to coat and serve.
